  • 2 teaspoons of baking powder
  • 2 teaspoons of sugar
  • 1 teaspoon of pumpkin pie spice (a mix of cinnamon, nutmeg, and cloves)
  • 2 teaspoons of melted butter
  • 3/4 cup of milk
  • 1/2 cup canned pumpkin puree
  • 2 eggs

Instructions

  1. In a mixing bowl, combine the baking mix, baking powder, sugar, and pumpkin pie spice.

  2. Add the melted butter, milk, pumpkin, and eggs to the dry ingredients. Stir the mixture until most of the lumps are gone. The batter should be smooth.

  3. Heat a non-stick skillet or griddle over medium-high heat. If needed, lightly grease the cooking surface with butter.

  4. Pour a ladle of the pancake batter onto the hot skillet. Cook until you see small bubbles forming on the surface of the pancake.

  5. Carefully flip the pancake and cook until the other side is golden brown.
