- 4 medium potatoes
- 1/3 cup cooked peas, cooled
- 1 egg
- 1/2 teaspoon onion powder
- 1 tablespoon Dijon mustard (or yellow mustard, vinegar, or apple cider vinegar for alternative options)
- 1/2 teaspoon dried dill weed
- 1/4 cup mayo (or to taste)
- Salt, to taste
Instructions
- Peel and cook the potatoes in a pot of boiling water for 14 minutes until tender. Once cooled, cut the potatoes into bite-sized pieces.
- Cook the peas according to package instructions and set aside to cool.
- Peel and slice the egg. Chop a portion of the egg for the salad and slice the rest into rounds for the top of the salad.
- In a mixing bowl, combine the cooked potatoes, cooled peas, and chopped egg.
- In a separate bowl, whisk together the onion powder, Dijon mustard, dried dill weed, mayo, and salt.
- Pour the dressing over the potato mixture and toss until well combined.
- Taste and adjust seasoning if necessary.
