  • 4 medium potatoes
  • 1/3 cup cooked peas, cooled
  • 1 egg
  • 1/2 teaspoon onion powder
  • 1 tablespoon Dijon mustard (or yellow mustard, vinegar, or apple cider vinegar for alternative options)
  • 1/2 teaspoon dried dill weed
  • 1/4 cup mayo (or to taste)
  • Salt, to taste

Instructions

  1. Peel and cook the potatoes in a pot of boiling water for 14 minutes until tender. Once cooled, cut the potatoes into bite-sized pieces.
  2. Cook the peas according to package instructions and set aside to cool.
  3. Peel and slice the egg. Chop a portion of the egg for the salad and slice the rest into rounds for the top of the salad.
  4. In a mixing bowl, combine the cooked potatoes, cooled peas, and chopped egg.
  5. In a separate bowl, whisk together the onion powder, Dijon mustard, dried dill weed, mayo, and salt.
  6. Pour the dressing over the potato mixture and toss until well combined.
  7. Taste and adjust seasoning if necessary.
