Ingredients

  • 2 cups diced cooked chicken (rotisserie, leftover, or canned)

  • 1/3 cup small diced celery

  • 1/2 small red onion, diced

  • 1/3 cup shredded carrot (purple or orange)

  • 1/4 cup chopped raw walnuts

  • 1/4 cup dried cranberries (craisins)

  • 1/2 cup Greek yogurt

  • 1/2 cup light mayo

  • 2 tablespoons curry powder

  • 2 tablespoons honey

  • 1/2 lemon juiced
  • Salt and pepper to taste


Instructions

  1. In a large mixing bowl, combine chicken, celery, onion, carrot, walnuts, and craisins.

  2. In a small bowl, whisk together Greek yogurt, mayo, curry powder, honey, salt, and pepper.

  3. Pour the dressing over the chicken mixture and stir until fully combined.
