This refreshing cucumber avocado feta salad is the perfect no-lettuce summer side—fresh, creamy, tangy, and ready in minutes!
Ingredients

1 English cucumber, sliced

1 ripe avocado, diced

2 scallions, thinly sliced

5 oz feta cheese, crumbled

2 tablespoons fresh basil, sliced

1/4 cup olive oil

2 tablespoons rice vinegar

Juice of 1 lime

Salt and pepper, to taste
Instructions

In a small bowl or jar, combine olive oil, rice vinegar, lime juice, salt, and pepper. Shake or whisk to combine.

In a large bowl, mix cucumber, avocado, scallions, basil, and feta.

Pour dressing over the salad and toss gently.
