Some of my fondest childhood memories come from hot summer days. My parents would often take us to the beach and when we came home, mom mom would mix her her famous Tomato Salad. I also remember cool sliced cucumbers from the garden, sprinkled with salt. My Kids LOVE a Chicken Caesar Salad Wrap! Just use the recipe for Chicken Caesar Salad with Rotisserie Chicken from this blog post and roll it into a wrap! Voila! Oh and I’ve even used canned chicken with these before and they are still a hit!
Chicken Salad Sandwiches
I have fond memories of my mom dicing up leftover BBQ Chicken (on the bone), tossing it in mayo and placing it on a bulkie roll. These days, I still prefer a little bbq sauce in my chicken salad. There is nothing like it! I also absolutely love this Waldorf Chicken Salad Sandwich too and my kids agree!
Ice Cream Novelties
This isn’t a recipe but lately I’ve been buying a different ice cream novelty each week to share with the kids. They are inexpensive and a great way to cool down after a hot day! It’s fun trying all the different kinds I remember from childhood and sharing them with my kids. Lately, we tried, strawberry shortcake bars, fudgesicles, creamsicles, Mickey Mouse Ice Cream, and Strawberry Outshine bars. I forgot how good the strawberry shortcake bars are! It’s fun to feel like a kid again!
