Description

A moist, rich chocolate chip zucchini loaf made with fresh zucchini, melted chocolate, and warm cinnamon—perfect for using up garden zucchini and satisfying any sweet tooth.


Ingredients

Scale
  • 1 oz unsweetened chocolate

  • 2 cups grated zucchini

  • 1 cup oil (or swap half/all for applesauce)

  • 2 cups sugar

  • 3 eggs

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 2 cups flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 3/4 cup semi-sweet chocolate chips


Instructions

  • Preheat oven to 350°F.

  • Melt chocolate in a microwave-safe bowl, stirring every 15 seconds until smooth.

  • In a stand mixer, beat zucchini, oil, sugar, eggs, and vanilla until combined.

  • Mix in melted chocolate.

  • Stir in flour, baking soda, salt, and cinnamon until just moistened.

  • Fold in all but 3 tbsp of chocolate chips.

  • Grease two loaf pans and divide batter evenly.

  • Bake for 20 minutes, sprinkle remaining chips on top, then bake an additional 40 minutes or until a toothpick comes out clean.
