A moist, rich chocolate chip zucchini loaf made with fresh zucchini, melted chocolate, and warm cinnamon—perfect for using up garden zucchini and satisfying any sweet tooth.
Ingredients

1 oz unsweetened chocolate

2 cups grated zucchini

1 cup oil (or swap half/all for applesauce)

2 cups sugar

3 eggs

1 tsp vanilla

1 tsp cinnamon

2 cups flour

1 tsp baking soda

1 tsp salt

3/4 cup semi-sweet chocolate chips
Instructions

Preheat oven to 350°F.

Melt chocolate in a microwave-safe bowl, stirring every 15 seconds until smooth.

In a stand mixer, beat zucchini, oil, sugar, eggs, and vanilla until combined.

Mix in melted chocolate.

Stir in flour, baking soda, salt, and cinnamon until just moistened.

Fold in all but 3 tbsp of chocolate chips.

Grease two loaf pans and divide batter evenly.

Bake for 20 minutes, sprinkle remaining chips on top, then bake an additional 40 minutes or until a toothpick comes out clean.
