These chicken roll ups are super easy to put together, served cold, and really healthy. You’re going to love the avocado and chicken together!

- 1/2 avocado
- 1 1/2 tbsp greek yogurt (or sour cream)
- 3/4 tsp lime juice
- 1/4 red onion (finely chopped)
- 1/2 red bell pepper (finely chopped)
- 1 tbsp scallions (diced)
- 1 12.5oz container chicken
- 2 xl burrito sized tortillas
Instructions
- Mix all ingredients aside from the tortillas.
- Spread half the mixture over each tortilla and roll tightly.
- Slice into 1/4 inch slices. Refrigerate until ready to serve!
