- 2 cloves garlic, minced (or 1 teaspoon garlic powder)
- ¼ cup chopped fresh cilantro
Optional Side:
- 2 red onions, cut into wedges (or yellow onions)
- Drizzle of olive oil
- Salt and pepper, to taste
Instructions
Step 1: Marinate the Chicken
- In a large bowl or zip-top bag, combine Greek yogurt, lime juice, ginger, paprika, garam masala, turmeric, coriander, and cayenne (if using). Mix until smooth.
- Add the chicken drumsticks, ensuring they are fully coated with the marinade. Seal the bag or cover the bowl and refrigerate for at least 20 minutes (up to 4 hours for maximum flavor).
Step 2: Prepare for Baking
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper or aluminum foil. Arrange the marinated drumsticks in a single layer, ensuring they’re not touching.
Step 3: Bake the Chicken
- Bake for 20 minutes.
- Add onion wedges to the tray, drizzle with olive oil, and season with salt and pepper. Return to the oven and bake for an additional 20 minutes, or until the chicken reaches an internal temperature of 175°F.
Step 4: Make the Cilantro Lime Rice
- Cook rice according to package instructions.
- While the rice is still hot, stir in olive oil, lime zest, and minced garlic. Mix well to infuse the flavors.
- Add chopped cilantro, mix again, and serve warm.
Step 5: Serve and Enjoy
- Plate the chicken drumsticks alongside the cilantro lime rice. Serve with roasted onions or additional vegetables like asparagus or peas for a complete meal.
