Ingredients

  • 4 small chicken breasts or two large breasts sliced in half
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ a teaspoon black pepper
  • 1 ½ cups grape tomatoes sliced in half
  • ½ a cup sliced basil leaves
  • 10 cups spring mix
  • 1 package small ball mozzarella or sliced fresh mozzarella
  • 2 avocados halved and sliced
  • Olive Oil
  • Balsamic vinegar
  • Balsamic glaze
  • Malden Sea Salt

Instructions

  1. Marinade chicken breasts in the oil, vinegar, salt, pepper, and garlic powder for at least an hour up to 5 hours in the fridge.
  2. When ready to grill the chicken, assemble the salad on a large serving platter, lettuce first, tomatoes, mozzarella, and sliced avocado.
  3. Grill the chicken over medium high heat for 5 minutes on each side.
  4. Remove and slice. Place the slices over the salad.
  5. Sprinkle the salad with the fresh sliced basil.
  6. Drizzle the salad with olive oil, balsamic vinegar, and balsamic glaze.
  7. Sprinkle with Malden sea salt and enjoy!
