Ingredients

  • 2 1/2 cups rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoons salt
  • 1 egg
  • 1 cup almond milk
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1/2 cup grated carrots

Frosting:

  • 1/2 cup cream cheese
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla

Instructions

  • Preheat oven to 325 degrees
  • Grind oats until they become a chunky flour mixture.
  • Mix oats, baking powder, cinnamon, nutmeg, and sea salt.
  • Whisk egg, milk, melted coconut oil, and maple syrup together.
  • Mix the wet ingredients and dry with the carrots.
  • Pour the mixture into a greased 8×8 inch baking dish and bake for 40 minutes.
  • Let the carrot cake bars cool for a few minutes then remove from the pan and let cool completely on a rack.
  • Mix the cream cheese, syrup, and vanilla with a stand or hand mixer.
  • When cool, frost the bars and slice.
