- 2 1/2 cups rolled oats
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/4 teaspoons nutmeg
- 1/4 teaspoons salt
- 1 egg
- 1 cup almond milk
- 1/4 cup coconut oil
- 1/3 cup maple syrup
- 1/2 cup grated carrots
Frosting:
- 1/2 cup cream cheese
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla
Instructions
- Preheat oven to 325 degrees
- Grind oats until they become a chunky flour mixture.
- Mix oats, baking powder, cinnamon, nutmeg, and sea salt.
- Whisk egg, milk, melted coconut oil, and maple syrup together.
- Mix the wet ingredients and dry with the carrots.
- Pour the mixture into a greased 8×8 inch baking dish and bake for 40 minutes.
- Let the carrot cake bars cool for a few minutes then remove from the pan and let cool completely on a rack.
- Mix the cream cheese, syrup, and vanilla with a stand or hand mixer.
- When cool, frost the bars and slice.
