    • 2 yellow onions, thinly sliced

    • 3/4 cup water
    • 1 tablespoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
    • 1 tablespoon fresh sage, chopped (or 1/2 teaspoon dried sage)
    • 1 pinch crushed red pepper flakes (optional)
  • For the Sandwich:
    • 8 slices sourdough bread (or any sturdy bread)
    • 2 tablespoons softened butter
    • 3 cups shredded cheddar cheese
    • 1 honeycrisp apple, thinly sliced (or any firm, tart apple)
    • Optional: 4 slices of prosciutto or bacon

Instructions

  1. Caramelize the Onions:
    Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the onions and cook for 3 minutes until softened.
  2. Add half of the water, season with salt and pepper, and continue cooking for 5 minutes until most of the water has evaporated.
  3. Add the remaining water and cook for another 5 minutes, stirring occasionally, until the onions are golden and caramelized. Stir in thyme, sage, and crushed red pepper flakes (if using). Remove from heat.
  4. Cook the Prosciutto or Bacon (Optional):
    In a separate skillet over medium heat, cook the prosciutto or bacon until crisp, about 2 minutes per side. Set aside.
  5. Assemble the Sandwiches:
    Brush the outside of each bread slice with softened butter. On the inside of 4 slices, layer shredded cheddar cheese, caramelized onions, apple slices, and prosciutto or bacon (if using). Top with the remaining bread slices, buttered side facing out.
