Why You’ll Love This Fall Grilled Cheese

  • Elevated Comfort Food: This isn’t your average sandwich—it’s grilled cheese turned gourmet.
  • Perfect for Meal Planning: Make a batch of caramelized onions ahead and build sandwiches throughout the week.
  • Customizable for Everyone: Vegetarian? Meat lover? This grilled cheese works for all.
  • Back-to-School Friendly: Quick to assemble and satisfying enough to keep everyone full.
  • Peak Fall Flavor: Apples, onions, and herbs make this the coziest sandwich you’ll eat this season.

Ingredients

For the Caramelized Onions:

  • 3 tablespoons salted butter, divided
  • 2 yellow onions, thinly sliced
  • Salt and black pepper, to taste
  • ¾ cup water
  • 1 tablespoon fresh thyme leaves (or ½ teaspoon dried)
  • 1 tablespoon chopped fresh sage (or ½ teaspoon dried)
  • Pinch of red pepper flakes (optional)

For the Sandwiches:

  • 8 slices sourdough bread (or other sturdy bread)
  • 2 tablespoons softened butter
  • 3 cups shredded cheddar cheese
  • 1 Honeycrisp apple, thinly sliced (or any tart, firm apple)
  • Optional: 4 slices prosciutto or bacon

How to Make Caramelized Onion Grilled Cheese

1. Caramelize the Onions

sliced onions in a grey frying pan with butter on an electric cook top

In a large skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook for 3 minutes until softened.

Pour in half the water, season with salt and pepper, and cook 5 minutes until mostly evaporated. Add remaining water and continue cooking 5 more minutes, stirring occasionally.

Once golden and soft, stir in thyme, sage, and red pepper flakes. Remove from heat and set aside.

2. Cook the Prosciutto or Bacon (Optional)

In a separate skillet, cook prosciutto or bacon over medium heat for about 2 minutes per side until crisp. Remove and set aside.

3. Assemble the Sandwiches

Butter the outside of all 8 bread slices. On 4 slices, layer cheese, caramelized onions, apple slices, and prosciutto or bacon (if using). Top with remaining slices, buttered side out.

4. Cook the Grilled Cheese

Heat a skillet or griddle over medium heat. Cook sandwiches 3–5 minutes per side until golden brown and the cheese is fully melted.

5. Serve and Enjoy

Slice each sandwich in half and serve hot. This sandwich pairs perfectly with soup or salad for a cozy fall meal.

Tips for the Best Grilled Cheese

  • Don’t Skip the Caramelized Onions: Their deep, rich flavor is what makes this sandwich shine.
  • Thinly Slice the Apple: You want a bit of crunch without overpowering the sandwich.
  • Use Fresh Herbs if You Can: Sage and thyme add that warm fall flavor.
  • Sourdough Works Best: It’s sturdy and crisps up beautifully in the pan.
  • Meal Prep Tip: Caramelized onions can be made up to 4 days ahead and stored in the fridge.

Variations

  • Vegetarian Version: Skip the prosciutto and add a dash of smoked paprika for flavor.
  • Cheese Options: Swap cheddar for gruyère or gouda for a richer melt.
  • Add Arugula: For a peppery bite and extra freshness.
  • Try a Spread: Add a thin layer of Dijon mustard or fig jam before layering your fillings.

Storage Instructions

  • Leftovers: Store fully cooked sandwiches in the fridge for up to 2 days. Reheat in a skillet or air fryer to keep them crispy.
  • Make-Ahead: Caramelized onions can be prepped in advance, and sandwiches can be assembled and wrapped for up to 1 day before cooking.

What to Serve With This Fall Grilled Cheese

  • Soup: Tomato basil, roasted red pepper, or butternut squash.
  • Salad: Arugula with lemon vinaigrette or a fall harvest salad with apples and pecans.
  • Drinks: Apple cider (hot or cold), white wine, or a crisp beer.

Description

This Caramelized Onion, Apple, and Cheddar Grilled Sandwich is a real treat—a restaurant-worthy bite you’d expect to see on the blackboard at your favorite lunch spot. With layers of golden caramelized onions, crisp apple slices, and melted cheddar on crusty sourdough, it’s an irresistible combination of savory and sweet. This sandwich is equally delicious as a vegetarian option, but feel free to add prosciutto or bacon for a bit of smoky richness. Perfect for a special lunch or cozy dinner!

Ingredients

  • 3 tablespoons salted butter, divided
  • 2 yellow onions, thinly sliced
  • Salt and black pepper, to taste
  • 3/4 cup water
  • 1 tablespoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 tablespoon fresh sage, chopped (or 1/2 teaspoon dried sage)
  • 1 pinch crushed red pepper flakes (optional)
  • 8 slices sourdough bread (or any sturdy bread)
  • 2 tablespoons softened butter
  • 3 cups shredded cheddar cheese
  • 1 honeycrisp apple, thinly sliced (or any firm, tart apple)
  • Optional (non vegetarian): 4 slices of prosciutto or bacon

Instructions

  1. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onions and cook for about 3 minutes until softened.
  2. Add half of the water, season with salt and pepper, and continue cooking for 5 minutes until most of the water has evaporated.
  3. Add the remaining water and cook another 5 minutes, or until the onions are golden and caramelized. Stir in the thyme, sage, and red pepper flakes (if using). Remove from heat.
  4. In a separate skillet over medium heat, cook the prosciutto until crisp (optional), about 2 minutes per side. Remove from skillet and set aside.
  5. Brush the outside of each bread slice with softened butter. On the inside of 4 slices, layer with shredded cheddar cheese, caramelized onions, thin apple slices, and prosciutto (if using). Top with remaining bread slices, buttered side facing out.
  6. Place the sandwiches in a skillet over medium heat, cooking 1-2 at a time, until golden on each side, about 3-5 minutes per side.
  7. Slice in half and serve immediately. Enjoy the melty, caramelized goodness!
