Ingredients
- 2 boneless, skinless chicken breasts
- Olive oil
- Cajun seasoning (such as Tony’s)
- 1 onion, chopped
- 1/2 red pepper, chopped
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon cajun seasoning
- 1 teaspoon smoked paprika
- 1 1/2 cups orzo
- 1 1/2 teaspoons chicken bouillon
- 1 1/2 cups water
- 4 cups milk
- Juice of 1 lemon
- 2 tablespoons grated Parmesan cheese
- Fresh cracked black pepper, to taste

Preheat your oven to 400°F (200°C).

Slice the chicken breasts in half horizontally to make thinner cutlets. Brush them with olive oil and generously sprinkle with Cajun seasoning. Place them on a baking sheet and bake for 25-30 minutes or until cooked through.

While the chicken is cooking, heat a skillet over medium heat. Add 2 tablespoons of butter.

Add chopped onion and red pepper (if using) to the skillet. Cook for about 5 minutes until the onion is translucent.

Stir in minced garlic, Cajun seasoning, and smoked paprika. Cook for another minute until fragrant.

Add 1 1/2 cups of orzo and 1 1/2 teaspoons of chicken bouillon to the skillet. Stir to coat the orzo with the seasoning.

Pour in 1 1/2 cups of water and 4 cups of milk and stir continuously. Bring the mixture to a boil.

Reduce the heat to low and continue stirring for 8-9 minutes or until the orzo is cooked and the sauce has thickened.

Remove from heat and squeeze the juice of 1 lemon into the orzo. Add grated Parmesan cheese and fresh cracked black pepper. Stir until well combined.
