  • 2 boneless, skinless chicken breasts
  • Olive oil
  • Cajun seasoning (such as Tony’s)
  • 1 onion, chopped
  • 1/2 red pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 1/2 cups orzo
  • 1 1/2 teaspoons chicken bouillon
  • 1 1/2 cups water
  • 4 cups milk
  • Juice of 1 lemon
  • 2 tablespoons grated Parmesan cheese
  • Fresh cracked black pepper, to taste
 

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Slice the chicken breasts in half horizontally to make thinner cutlets. Brush them with olive oil and generously sprinkle with Cajun seasoning. Place them on a baking sheet and bake for 25-30 minutes or until cooked through.

  3. While the chicken is cooking, heat a skillet over medium heat. Add 2 tablespoons of butter.

  4. Add chopped onion and red pepper (if using) to the skillet. Cook for about 5 minutes until the onion is translucent.

  5. Stir in minced garlic, Cajun seasoning, and smoked paprika. Cook for another minute until fragrant.

  6. Add 1 1/2 cups of orzo and 1 1/2 teaspoons of chicken bouillon to the skillet. Stir to coat the orzo with the seasoning.

  7. Pour in 1 1/2 cups of water and 4 cups of milk and stir continuously. Bring the mixture to a boil.

  8. Reduce the heat to low and continue stirring for 8-9 minutes or until the orzo is cooked and the sauce has thickened.

  9. Remove from heat and squeeze the juice of 1 lemon into the orzo. Add grated Parmesan cheese and fresh cracked black pepper. Stir until well combined.

  10. Slice the cooked Cajun chicken and serve it over the creamy orzo. Enjoy your creamy Cajun chicken orzo!
