Ingredients

  • 3 mashed ripe bananas

  • 3 eggs

  • 1/4 cup honey

  • 1 tsp vanilla extract

  • 1/4 cup coconut flour

  • 1/2 cup instant oats

  • 1/2 cup Vanilla Naked Protein Powder (or whey protein powder)

  • 2 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/2 cup chocolate chips or chopped walnuts (optional)


Instructions

  • Preheat the Oven: Preheat your oven to 350°F and spray two silicone mini muffin pans with non-stick spray.

  • Mix Wet Ingredients: In a large mixing bowl, whisk together the mashed bananas, eggs, honey, and vanilla extract until smooth.

  • Mix Dry Ingredients: In a separate bowl, whisk together the dry ingredients—coconut flour, oats, protein powder, baking powder, cinnamon, and salt.

  • Combine Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture, mixing until just combined. If you’re using chocolate chips or chopped walnuts, gently fold them in now.

  • Scoop the Batter: Scoop the batter into the prepared muffin trays, filling each cup about 3/4 of the way full.

  • Bake: Bake at 350°F for 13 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  • Cool and Serve: Remove the muffins from the oven and let them cool completely before serving.
