- 2 large chicken breasts (or 4 smaller ones)
- 2 eggs
- 1 cup breadcrumbs (plain, Panko, or Italian seasoned)
- 1/4 cup Parmesan cheese (freshly grated or pre-shredded)
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1 cup marinara sauce
- 1 cup mozzarella cheese (shredded or fresh)
- Optional: Pasta, spaghetti squash, fresh basil, or parsley

- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, whisk the eggs. In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, and black pepper.
- Slice chicken breasts in half lengthwise to create thinner cutlets. Pound them to 1/4-inch thickness using a meat mallet or rolling pin.
- Dip each chicken cutlet into the egg mixture, then coat it in the breadcrumb mixture. Place the breaded chicken on the prepared baking sheet.
- Bake the chicken for 15 minutes.
- Remove from the oven and spoon marinara sauce over each cutlet. Sprinkle with mozzarella cheese.
- Return the chicken to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
- Serve over pasta or spaghetti squash, garnished with Parmesan and fresh basil or parsley if desired.
Notes
- For a gluten-free version, use gluten-free breadcrumbs.
- Provolone cheese can be used in place of mozzarella for a different flavor.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
