Description

This Baked Chicken Parmesan recipe is a lighter, healthier take on the classic Italian dish. With crispy breaded chicken, marinara sauce, and gooey melted cheese, it’s perfect for family dinners or date nights. Serve it with pasta or spaghetti squash for a complete meal!

  • 2 large chicken breasts (or 4 smaller ones)
  • 2 eggs
  • 1 cup breadcrumbs (plain, Panko, or Italian seasoned)
  • 1/4 cup Parmesan cheese (freshly grated or pre-shredded)
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese (shredded or fresh)
  • Optional: Pasta, spaghetti squash, fresh basil, or parsley

Instructions

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, whisk the eggs. In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, and black pepper.
  3. Slice chicken breasts in half lengthwise to create thinner cutlets. Pound them to 1/4-inch thickness using a meat mallet or rolling pin.
  4. Dip each chicken cutlet into the egg mixture, then coat it in the breadcrumb mixture. Place the breaded chicken on the prepared baking sheet.
  5. Bake the chicken for 15 minutes.
  6. Remove from the oven and spoon marinara sauce over each cutlet. Sprinkle with mozzarella cheese.
  7. Return the chicken to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
  8. Serve over pasta or spaghetti squash, garnished with Parmesan and fresh basil or parsley if desired.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs.
  • Provolone cheese can be used in place of mozzarella for a different flavor.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
