1 cup organic all-purpose flour

1/4 cup light brown sugar (for crust)

3/4 cup grass-fed unsalted butter, room temperature (divided)

1 1/2 cups Talamock or Good Culture cream cheese, room temperature

1/3 cup granulated sugar

1 large pasture-raised organic egg, room temperature

1 teaspoon vanilla extract

2 organic Granny Smith apples, peeled, cored, chopped

1 tablespoon granulated sugar (for apple layer)

1/4 teaspoon ground cinnamon (plus 1/4 teaspoon for streusel)

Pinch of ground nutmeg (optional)

1/4 cup organic rolled oats
Instructions

Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

For crust, mix flour and ¼ cup brown sugar. Cut in ½ cup butter until crumbly. Press into pan. Bake 12-14 minutes until light golden.

Beat cream cheese and granulated sugar until smooth. Add egg and vanilla; mix well. Pour over warm crust.

Toss apples with 1 tbsp sugar, cinnamon, and nutmeg. Spread over cheesecake layer.

Mix ⅓ cup brown sugar, ½ cup flour, oats, cinnamon, and remaining ¼ cup butter until crumbly. Sprinkle on top.
