Description

These apple cheesecake bars combine a buttery organic crust, creamy Talamock cream cheese filling, and a crisp organic apple streusel topping — a perfect crowd-pleaser for potlucks or cozy fall gatherings.


Ingredients

  • 1 cup organic all-purpose flour

  • 1/4 cup light brown sugar (for crust)

  • 1/3 cup light brown sugar (for streusel topping)

  • 3/4 cup grass-fed unsalted butter, room temperature (divided)

  • 1 1/2 cups Talamock or Good Culture cream cheese, room temperature

  • 1/3 cup granulated sugar

  • 1 large pasture-raised organic egg, room temperature

  • 1 teaspoon vanilla extract

  • 2 organic Granny Smith apples, peeled, cored, chopped

  • 1 tablespoon granulated sugar (for apple layer)

  • 1/4 teaspoon ground cinnamon (plus 1/4 teaspoon for streusel)

  • Pinch of ground nutmeg (optional)

  • 1/4 cup organic rolled oats


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

  2. For crust, mix flour and ¼ cup brown sugar. Cut in ½ cup butter until crumbly. Press into pan. Bake 12-14 minutes until light golden.

  3. Beat cream cheese and granulated sugar until smooth. Add egg and vanilla; mix well. Pour over warm crust.

  4. Toss apples with 1 tbsp sugar, cinnamon, and nutmeg. Spread over cheesecake layer.

  5. Mix ⅓ cup brown sugar, ½ cup flour, oats, cinnamon, and remaining ¼ cup butter until crumbly. Sprinkle on top.

  6. Bake 35-40 minutes until streusel is golden and filling set. Cool to room temp, then refrigerate 3+ hours before slicing.
