  • 2 cloves garlic or 1 tsp garlic powder
  • 6 slices chopped bacon
  • ¼ cup flour
  • 4 cups chicken broth, bouillon, or water + salt
  • 1 can drained chicken or shredded organic chicken
  • 1 can drained corn, frozen, or fresh
  • 1 cup heavy cream (organic if possible)
  • ¾ tsp Italian seasoning
  • Pinch of cayenne pepper
  • 3 russet potatoes, peeled and cubed

How to Make This Chicken and Corn Soup

  1. In a soup pot, cook bacon until crispy.
  2. Add onion and celery, sauté for 5 minutes until soft.
  3. Stir in flour and cook 1 minute, then garlic for 30 seconds.
  4. Pour in broth, corn, cream, and chicken.

  6. Bring to a boil, reduce to simmer, and cover halfway.

Ingredients

  • 1/2 onion (chopped)
  • 2 stalks celery (chopped)
  • 2 cloves garlic (minced)
  • 6 slices bacon (cut up)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 can corn (drained)
  • 1 12.5oz can chicken (drained)
  • 1 cup heavy cream
  • 3/4 tsp italian seasoning
  • 1 pinch cayanne
  • 3 russet potatoes (peeled and diced)

Instructions

  1. In a large soup pot, sauté bacon until crispy.
  2. Add in celery and onion and cook for about 5 minutes until soft.
  3. Add in flour and stir constantly for 1 minute.
  4. Add in minced garlic and sauté for 30 seconds until fragrant.
  5. Add in broth, corn, chicken, cream, spices, and potatoes.
  6. Bring to a boil, reduce heat to low. Cover half way and cook for an additional 15-20 minutes until the potatoes are fully cooked through.
