You’d never know that simply grilled sweet potatoes and with a cilantro lemon vinaigrette could pack such a punch!
Sweet potatoes are so inexpensive and very nutritious! Grilling them to perfection makes them tender and delicious. This recipe ups the already delicious sweet potato by adding a scrumptious sauce made with lemon juice and cilantro. Cilantro is a really inexpensive herb that can really elevate an unassuming starch like sweet potatoes!
How to Make the Grilled Sweet Potatoes
Cut and peel up to 3lbs of sweet potatoes into 1/4 inch wedges. Coat with olive oil and sprinkle with salt. Grill these over medium high heat for 3-6 minutes per side until soft. If you don’t want to grill the potatoes, you can bake them at 425 degrees for 20 minutes, flipping half way.
For the dressing mix:
1/4 cup olive oil
1Tbs lemon juice
1/4 cup cilantro
Pour this mixture on top of the sweet potatoes once they come off the grill or out of the oven, tossing to coat.
What to Serve the Sweet Potatoes With
If you’re looking for something on the grill, I highly recommend these marinated chicken tenders. You can make your whole meal on the grill and keep everything inside cool!
If you’re not feeling the tenders, I’d recommend a simple grilled burger or some chicken kebabs also on the grill!

Grilled Sweet Potatoes with Cilantro Sauce
Ingredients
- 3 lbs sweet potatoes or less
- 1 tbsp olive oil
- 1 tsp salt
Vinaigrette
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 1/4 cup cilantro
Instructions
- Cut and peel sweet potatoes into 1/4 inch wedges and toss in olive oil and salt.
- Grill over medium high heat for 3-6 minutes on each side until tender.
- Mix vinaigrette ingredients and pour over cooked potatoes. Toss to coat and enjoy!
