The Meal Plan:
Dinner 1:
Tacos – This is so basic, it doesn’t need a recipe! Cook up your taco flavored ground turkey, warm your tortillas, and serve them with shredded cheese, sour cream, and salsa! If you need more filling, mix a can of refried beans into the ground beef.
Dinner 2:
Michelle’s Slow Cooker Curry Chicken – This recipe was originally submitted by a Youtube subscriber and quickly became a family favorite. It’s the prefect meal for a tighter budget!
Dinner 3:
Veggie Fried Rice is always a default budget meal for us. It’s simple and we all just love it so much. I was shocked that I was also able to afford these delicious dumplings to go along with it!
Dinner 4:
Refried Beans and Rice– This recipe is surprisingly hearty and flavorful!
Dinner 5:
Slow Cooker Ritz Chicken With Green Beans – This is a classic that is such a treat on a menu like this!
Dinner 6:
Baked Chicken and Rice With Roasted Broccoli – The original baked chicken and rice is here and I just adjusted it by using chicken breasts vs. chicken thighs.
Roasted Broccoli:
Ingredients:
1 large head of broccoli cut into florets
2 tablespoons olive oil
3 cloves garlic, minced
0.5 teaspoons salt
0.25 teaspoons black pepper
Optional- Fresh lemon juice and parmesan cheese
Instructions:
1. Mix all of the ingredients together in a bowl.
2. Pour the broccoli on to a parchment lined backing sheet and distribute evenly.
3. Bake at 350 degrees for 20 minutes, or until the broccoli is cooked according to your liking.
4 Optional: Squeeze fresh lemon on the broccoli and sprinkle with parmesan cheese.
Dinner 7:
Leftovers! I always recommend having a leftovers night because there is undoubtedly this and that left at the end of every week. It’s a great way to avoid waste and save money!
The meal plan also allowed for some roll over ingredients such as extra rice, buttery crackers, and flour tortillas! I recommend using my “Stick to Your Budget Checklist” to plan out next week’s meals and be sure to include those roll over items to make your pantry friendly meals!
