Description

A sweet and tangy three bean salad made with canned beans, olive oil, vinegar, and fresh herbs—perfect for picnics, potlucks, or meal prep.


Ingredients

  • 1 can red kidney beans, drained

  • 1 can cut green beans, drained

  • 1 can cut wax beans (or black-eyed peas), drained

  • 1 onion, diced

  • 1/4 cup coconut sugar (or regular sugar)

  • 1/2 cup white wine vinegar

  • 1/2 cup olive oil

  • 1/2 tsp dried basil

  • 2 tbsp fresh parsley, minced


Instructions

  1. In a large bowl, combine all the drained beans, diced onion, and herbs.

  2. In a small bowl or jar, whisk together the coconut sugar, vinegar, and olive oil until well mixed.

  3. Pour the dressing over the bean mixture and toss to coat evenly.

  4. Cover and refrigerate overnight to let the flavors marinate.

  5. Stir before serving and enjoy chilled!
